Danas 14.oktobra 2018.godine kada se obeležava Međunarodni dan prokupca, odlučio sam da uparivanje vina i hrane posvetim prokupcu. I to ne bilo kojem već onom koji proizvodi vinski čarobnjak Kosta Botunjac iz sela Donje Zleginje u Župi. Pre nekoliko meseci bio sam u poseti podrumu Botunjac gde sam uživao u izvarednim vinima i gostoprimstvu dragog mi Koste. Probali smo zaboravljenu sortu Jagoda, koja svojim mirisom i svežinom obraduje sva vaša čula, nadaleko poznati Botunjčevi pinoi, ukusni i očaravajući prosto vas teraju da od domaćina tražite da vam naspe još ovog čarobnog nektara. Da bi na kraju došlo njegovo veličanstvo Prokupac imena Sveti Gral. Za perfect match odabrao sam rolovanu teletinu sa pančetom i suvim šljivama uz fino sočivo. Vino je lepe rubin crvene boje, bistro i viskozno. Na nosu dominiraju mirisi maline i šljive , koji prate suve šljive u teletini. The wine I chose to pair with this desert is Tokaji Aszú 3 puttonyos 2006. Produced from two varieties of grapes Furmint and Hárslevelű. This world-famous sweet wine, from around the town of Tokaj-Hegyalja in Hungary, has been so long revered that it is even mentioned in the national anthem. The term 'aszu' refers to the berries affected by 'noble rot', which serves to concentrate the sweetness in the grape on the vine, and 'puttonyos' refers to the number of baskets of super-sweet paste made from these dry berries that are added to each cask of wine. Vivid gold colour in the glass and viscous , this elegant Tokaji Aszú has bright aromas of dried figs and candied peachs.
